T-Rex Stomped Potatoes
T-Rex Stomped Potatoes (aka Smashed Potatoes). If you don’t have a T-Rex to help cook, you can use just a glass or potato masher to “stomp” the potatoes.
Ingredients
1 pound of small yellow potatoes (e.g. Yukon Gold)
1 T melted butter
2 T Olive Oil
2 cloves of garlic (chopped or pressed)
Salt and Pepper
Grated Parmesan cheese
Instructions
Cook the potatoes (wash potatoes and put in pot of boiling salted water) until they can easily be pierced with a fork, about 15 minutes.
Drain and let cool. Cooled potatoes smash better.
Preheat the oven to 425 degrees.
Melt butter, add olive oil and garlic. Spread some on the baking sheet. Coat the potatoes with the rest of the butter sauce and spread potatoes on the baking sheet.
Using the bottom of a glass (coated with olive oil), smash the potatoes on the baking sheet.
Sprinkle with salt, pepper and Parmesan cheese.
Roast potatoes so they are crisp and browned, about 30 minutes.
