Spaghettisaurus Nests

Ingredients

  • 1 spaghetti squash

  • Olive oil

  • Salt and Pepper

  • Grated Parmesan cheese

Instructions

  1. Preheat Oven: to 400 degrees.

  2. Cut the Squash: Wash and cut the squash in 1.5 inch sized rings. Scoop out any seeds.

  3. Season: Spread olive oil on the baking sheet, lightly coat the rings of spaghetti squash with olive oil on both sides, place on baking sheet. Sprinkle with salt, pepper.

  4. Roast: Cook in 400 degree oven for about 25 minutes.

  5. Prep the “Nest”: Scoop out the squash strands, mix with parmesan cheese and place back in the round shells, making a nest.

Notes

You can make these ahead of time. Roast the rings and place in refrigerator. When ready, scoop out strands, mix with Parmesan cheese and warm in microwave or oven.
